In the history of teas and infusions the way they were used was mainly as a beverage, but if you think of teas and infusions as a herb there are lots of recipes that they can be used in.

For example for bara brith most recipes instruct you to use a breakfast tea to soak your fruit in, well how about using Earl Grey or lemongrass & Ginger or a chai or Liquorice or Moroccan Mint or sprearmint just to name a few out of 100s of blends.

If it’s a Hot day which we may have in the coming months you can make a strong ice tea like Lemon Tea into a long drink with ice for the kids, or freeze the infusion into an ice cube where the drinker can use the different flavoured ice cubes in different drinks, or freeze into a lollipop.

If you think of an infusion as a herb you can use it as part of a recipe for Starters, Mains, sweets or bases for cocktails the list is endless. If you use fruit teas then it is best to use a good quality which will give you large chunks of dried fruit. With this you regenerate the dry mix with either Apple or Pear juice and after 5 minutes add the mixture to flavour yogurts, breakfast cereals, custards or sauces for any filling, pies, pudding biscuit mixes chocolates, these are just a few ways you can use fruit teas.
