Monmouthshire Food Festival likes to keep things in the family. Cousins Mark and Owain Le Clare from Newport will be on hand to feed our visitors with the most delicious sweet and savoury crepes and wood fired pizza.
Cousins Mark and Owain Le Clare, local lads from Newport, will be cooking up a storm of sweet and savoury crepes and wood fired pizza at the Monmouthshire Food Festival.
Mark’s speciality is wood fired pizza. He has always been a keen cook and especially enjoying baking bread, Italian breads and pizzas in particular. He would often make focaccia and pizza for friends. Being a bit of a foodie, he regularly visited farmers markets and food festivals.
He talked to friends about how he would really like to set up a pizza business. He started to bake more and more and to learn as much as he could about baking and pizza making. It was more of a dream than a reality and the thought of leaving his job to set up his own business seemed like too much of a risk. However the thought of being a food trader really excited him. Early in 2016 he bought a pizza oven. His dough recipe was tried and tested and he practised making pizzas in his new oven on his parents drive. After a year of making pizzas, he hasn’t looked back for a second and wishes that he had done it sooner.
Owain’s speciality is making sweet and savoury crepes. He had a love of crepes from a young age and holidays usually meant eating crepes. This love has stayed with him for more than ten years.
Owain started in the food industry at the age of seventeen. Working for a local cafe really inspired him to do something for himself and so he bought a crepe cooker and began practising. In the meantime he went to work as a chef at a local pub to learn more about the catering industry. A year ago he felt that the time was right to begin his own business.
