Haven Distillery joins the Monmouthshire Food Festival for the first time where they will give a master class on gin.
At 11:30 on Sunday 21st May in the Look and Learn Theatre at Monmouthshire Food Festival Duncan Fox will tell you all you will ever want to know about gin.
Haven Distillery is a small cottage distillery in the borderland between Herefordshire and Wales which is called the Marches. Duncan is a Chartered Engineer and Alex was running an herb nursery. They decided that it would it be nice if they could think of something that combined their interests, abilities and passions and do something together. Duncan thought that gin would be the perfect thing. He is passionate about gin and Alex is both knowledgeable and passionate about herbs. So gin it was! Duncan decided he would learn what was required to build a distillery and make gin. Duncan and Alex’s name is Fox which leads to Sly Gin which is craftily made.
They converted an out building into a distillery from where they set about making gin. Alex’s expertise in growing herbs was invaluable to the project. Alex grows half the herbs in their garden that they distil.
In the London Dry Gin there are 12 botanicals, plus the juniper, 6 of which Alex grows in her herb garden. They are angelica root, lavender, rosemary, bayleaf, lemon thyme and apple mint.
Duncan has also created a Lemon Verbena Gin. In the Lemon Verbena there are 7 botanicals, plus juniper. Three are from the garden; angelica root, lavender and lemon verbena. They like to serve the lemon verbena gin with strawberries and tonic as a delicious summer drink. He is now developing a pink grapefruit gin which is nearly ready to go into production.
They only make one hundred bottles a week at the moment but have the capacity to double that without getting bigger premises or more equipment. They would like to get up to two hundred bottles a week and see where they go from there.
