Our Welsh Cask Vinegar is finally here.

You can now buy a bottle (or two!) from our website and add it to your box of beers.

Available in 500ml bottles with a classic swing top, reminiscent of beer bottles, this vinegar is suitable for culinary and cocktail use.

Our Vinegar Story

Our Welsh Cask Vinegar is finally here

When the COVID-19 pandemic hit the UK and lockdown kicked in, we quickly realised that we would lose 3,000 litres of beer that was destined for the hospitality industry.

We had been gearing up for a busy Easter period and our store room was full of casks. We managed to sell a lot of our bottled beer online but the casks were a little bit harder to shift!

The team at In The Welsh Wind Distillery were keen to help and came up with the idea of creating a cask-matured vinegar from this beer.

Reaching out to Orkney Craft Vinegar for their help and support, and some of their exclusive ‘mother’, and to Penderyn Distillery for Welsh whisky casks, we saved the beer and created this delicious low acidity vinegar.

Our Welsh Cask Vinegar is suitable for culinary & cocktail use.

We asked Owen from My Cocktail Bible to create a few recipes using our new vinegar. Why not follow the recipes below and see what you can come up with!

Strawberry & Basil Smash

Recipe

  • Gin – 50ml
  • Welsh Cask Vinegar – 20ml
  • Fresh Basil – 8 leaves
  • Fresh Strawberries – 2 muddled
  • Simple syrup – 15ml
  • Basil Garnish

Method

Add the strawberries to a shaker and muddle, then pour in the gin, vinegar and syrup Clap the basil to release the flavour, add to the shaker, fill with ice and shake. Double strain into a cocktail glass and garnish with basil.

Recipe

  • Eccentric Dewi Sant Gin – 25ml
  • Welsh Cask Vinegar – 25ml
  • Honey Sage Syrup – 25ml
  • Sparkling Water – 50ml
  • Sage Leaf Garnish

Method

Fill a rocks glass with ice and pour in the gin, vinegar, syrup and sparkling water. Garnish with a sage leaf

Honey Sage Syrup

0.3 cup boiling water, 1 cup honey, stir until dissolved. 3 grams sage leaves in syrup for 25mins off the boil. Strain, then ready to serve.
