Does wild food sound exciting to you? At 2 pm on Saturday Aidan Fisher and Henry Ashby will be cooking up a storm with lots of wild food in the demonstration tent at Monmouthshire Food Festival.
It all begins with Henry Ashby who is a local forager of renown. He finds exciting ingredients in the most unlikely places. He forages on the seashore or in local woodlands and throughout Monmouthshire. When Henry has foraged the wild food ingredients Aidan Fisher, Head Chef of the New Inn, Pwllmeyric near Chepstow sets about turning them into some amazing dishes. After sampling Aidan and Henry’s delicious wild food dishes how about some farmhouse cheddar from Somerset, home of traditional Cheddar cheese. The Artisan and Farmhouse Cheese Company bring you a range of cheddar cheese from mild to Fiery Fred’s Crazy Cheddar. This cheese has been matured longer than most and has developed a unique flavour with a powerful bite. It is not for the faint hearted! The cheese is made on the farm using milk from their herd of Friesian cows. The family has been making cheese for over fifty years using a closely guarded family recipe. They follow traditional methods to make their cheese and which is matured for between three to twelve months. The longer the cheese is stored the more mature it becomes, hence Fiery Fred!
