We are delighted that Kyle Wilson, Head Chef at Sawyers Bar and Grill in Magor will once again be at Monmouthshire Food Festival in the Demonstration Theatre. We can expect some seasonal dishes both savoury and sweet. He will be with us on Saturday at 1 pm cooking up some Autumnal treats.
Kyle will give us a master class in cooking lamb. His dish is a trio of lamb to include herb crusted loin, a ballontine wrapped in Carmarthenshire ham and a braised lamb neck croquette. To complete the dish a broad bean fricassee, potato mille feuille, carrot puree and jus. After watching Kyle work his magic with local lamb he will turn his hand to something deliciously sweet. We are promised pumpkin pie with walnut short crust pastry with treacle ice cream and parsnip crisps. I, for one, intend to try everything especially the treacle ice cream!
What better to drink after sampling delicious lamb than a glass of craft cider from Ty Gwyn made from local cider apples? Ty Gwyn use traditional varieties including Dabinett and Vilberie to make delicious ciders. If you would like to know more about these cider apples come along and ask Alex. He will be delighted to tell you all about them. Ty Gwyn are planning to launch a traditional perry.
