In preparation for the Royal visit to the Merseyside Maritime Museum on Thursday 17th May, Head Chef Ben Sheeran has been sourcing ingredients to serve to The Queen and The Duke of Edinburgh during their lunch in Liverpool.

The Royal couple will have their meal at the Maritime Dining Rooms within the Museum, with stunning views across the Albert Dock and the Pier Head.

The imaginative menu has been created by award-winning chef Ben Sheeran, who has personally visited the local areas where many of the ingredients have been sourced. Ben and his team travelled to Puffin Island off the coast of Anglesey, to begin preparations for the first course on the menu – Smoked Anglesey Mackerel. They line-caught the mackerel and brought it back to the Maritime Dining Rooms to be smoked in a blend of flavours, created specially for the Royal visit.

South Caernarfon Creameries' Dragon brand has grown by more than 400% in the past year.

According to commissioned research by Kantar Worldpanel, the Dragon brand has outperformed all other leading brands available for purchase in Wales in the last year; and, compared to those brands which trade on a 'Welsh image', Dragon is the only one showing growth.

"We have worked extremely hard over the past year to develop the Dragon brand in Wales. Compared to other brands trading on a Welsh image, Dragon is the only one that
has seen any sales growth. This could be related to the fact that Dragon is completely authentic, it is produced in Wales, packed in Wales and made using Welsh milk" explains Lynne King, Commercial Director at South Caernarfon Creameries. "This provides us with a clear indication that Welsh shoppers seem to prefer 'home produced' cheese."

"We are obviously mindful that the growth rate exceeding 400% in the year is extremely impressive. The percentage terms are large as we have come from a relatively small base, however more than 40% of Dragon's growth is incremental to the cheddar category, which means more people are buying cheese rather than simply switching their purchase from other brands or
supermarket own label options" adds Lynne.  "Research such as this is invaluable as it provides us with a benchmark of performance and an indication for future development."

A former royal chef who knows all the Queen's favourite dishes has been honoured with a prestigious award.

Kevin Williams, the Manager of Catering and Hospitality at Coleg Harlech, received the ultimate accolade from the Welsh Culinary Association of which he is a leading member.

Following on from 'The Basics' (Tuesday 15th May, 22nd and 29th. 7.00pm - 9.00pm), you will develop your skills as a wine taster and learn more about the less well known grape varieties. You will be able to find your way around the wine list of any good restaurant without just choosing a familiar name.
