Seafood Salad with Chilli, Lime & Mint
Seafood Salad with Chilli, Lime & MintPrawns and squid in a spicy salad bursting with fresh flavours. Lime juice, coriander and sesame oil give the dish a delightful oriental flavour with a spicy kick.

Serves 4
Preparation time: 10 mins
Cooking time: 2-3 mins

You’ll need:

  • 2 cleaned squid (score the skin and cut into 5cm squares)
  • 8 large peeled prawns (de-veined)
  • 15g fresh basil
  • 15g fresh mint
  • 15g fresh coriander
  • 2 tablespoons of chopped roasted nuts
  • 1 lime (quartered, for optional garnish)

For the dressing...

  • 2 tablespoons of lime juice
  • 2 tablespoons of Thai fish sauce
  • 1 tablespoon of sweet chilli sauce
  • 1 teaspoon of sesame oil
  • 2 teaspoons of sugar
  • 3 small onions, finely chopped
  • 1 small red chilli, deseeded and finely chopped
  • 2 spring onions, finely sliced

What next:

  1. Poach the squid in a pot of salted water and simmer for about a minute until the squid begins to curl.  Remove from the pot and place on a plate.
  2. Add the prawns to the water and simmer for about 2-3 minutes until they turn pink and firm.  Drain well.                    
  3. To make the dressing, mix the lime juice, Thai sauce, sweet chilli sauce, oil and sugar together until the sugar softens.
  4. Add the chopped small onions, red chilli and spring onions and mix well.
  5. Pour the dressing over the squid and prawns.
  6. Add the herbs and mix together well.
  7. Divide the salad between four plates, sprinkle the nuts around the salad and serve with the quartered lime.
