Seafood Salad with Chilli, Lime & Mint |
Prawns and squid in a spicy salad bursting with fresh flavours. Lime juice, coriander and sesame oil give the dish a delightful oriental flavour with a spicy kick.
Serves 4
Preparation time: 10 mins
Cooking time: 2-3 mins
You’ll
need:
- 2 cleaned squid (score the skin and cut into
5cm squares)
- 8 large peeled prawns (de-veined)
- 15g fresh basil
- 15g fresh mint
- 15g fresh coriander
- 2 tablespoons of chopped roasted nuts
- 1 lime (quartered, for optional garnish)
For the dressing...
- 2 tablespoons of lime juice
- 2 tablespoons of Thai fish sauce
- 1 tablespoon of sweet chilli sauce
- 1 teaspoon of sesame oil
- 2 teaspoons of sugar
- 3 small onions, finely chopped
- 1 small red chilli, deseeded and finely chopped
- 2 spring onions, finely sliced
What
next:
- Poach
the squid in a pot of salted water and simmer for about a minute until the
squid begins to curl. Remove from the pot and place on a plate.
- Add
the prawns to the water and simmer for about 2-3 minutes until they turn pink
and firm. Drain well.
- To
make the dressing, mix the lime juice, Thai sauce, sweet chilli sauce, oil and
sugar together until the sugar softens.
- Add the chopped small onions, red chilli and spring
onions and mix well.
- Pour
the dressing over the squid and prawns.
- Add the herbs and mix together well.
- Divide
the salad between four plates, sprinkle the nuts around the salad and serve
with the quartered lime.
