Oysters with Thai Style Sauce

You’ll need:

  • 6 fresh oysters per person
  • 6 teaspoons Thai fish sauce
  • 2 teaspoons caster sugar
  • 1 small red chilli, chopped fine
  • 1 small green chilli, chopped fine
  • 1 tablespoon rice vinegar

What next:

  1. Carefully open the oysters using an oyster knife. Cover one hand with a folded cloth and grip the shell in your palm.  Insert the knife next to the hinge of the shell and lever the oyster open. 
  2. Cut the meat away from the shell and discard the top shell.
  3. Loosen the oyster from the bottom shell and remove any broken shell.  Place on a plate or soup plate with ice.
  4. Mix all the ingredients together for the sauce.
  5. Spoon a little over each oyster and serve.
